Chicken Noodle Soup

Serves 4 

Ingredients

  • Drizzle olive oil

  • 1 shallot or small onion, peeled and chopped

  • 1 stick of celery

  • Large thumb-size piece ginger, finely chopped or grated

  • Thumbnail size piece of fresh turmeric, finely chopped or grated

  • 4 garlic cloves, pressed

  • 2 carrots, finely chopped or spiralised

  • Handful of mushrooms, chopped

  • 1.6 litres stock (I used chicken bone broth)

  • Chopped green veg – 3 handfuls – I used broccoli and Cavelo Nero. (Spinach, regular kale, cabbage, pak choi would all work)

  • Handful fresh parsley, stalks finely chopped, leaves roughly chopped

  • Handful fresh coriander, stalks finely chopped, leaves roughly chopped

  • 1 fresh chilli sliced (optional)

  • Leftover chicken (or you can buy ready-cooked chicken pieces) shred

  • 125g soba noodles (buckwheat)

Method

  1. Cook your soba noodles, according to the instructions. Drain and plunge in cold water. Reserve to add to the soup.

  2. To make the soup: sauté the onion and celery in olive oil until soft 

  3. Add mushrooms, garlic and ginger and sauté until they soften.

  4. Add the stock, turmeric, green veggies and bring to boil.

  5. Simmer 3-4 mins until veggies nearly cooked.

  6. Add the chicken, carrots, parsley and coriander stalks and simmer until chicken heated through, then add the drained noodles.

  7. Top with the chopped parsley and coriander leaves and chilli (if using)

  8. Enjoy!

Super-charge your soup with Turmeric, Ginger and Garlic

Turmeric root is a spice commonly used in Asian food. It is one of the typical spices in curry. It has a warm, earthy, slightly bitter taste and gets its rich colour from the curcuminoids it contains. Curcumin is a powerful anti-inflammatory.

Ginger belongs to the same family as turmeric and it is also a good anti-inflammatory. Ginger is also great for soothing the digestion, alleviating discomfort and may help eliminate gas. It is great for mild nausea too. Add slices of ginger root to hot water and lemon for a lovely warming drink to soothe sore throats and stuffy noses

Garlic has anti-microbial properties as well as being supportive for cardiovascular health and the liver.
